The only thing that two moms locally believed that would keep them sane is a good cup of coffee. Then they realized instead of spending money making pots of their favorite caffeine or buying it from Starbucks, why not turn it into an opportunity to serve others too.
That’s how Sanity Coffee Company came to be a reality in Cedartown, after it began last year with food truck-style service.
Moms Jessica Ellington and Halie Parker have been longtime friends and as their children have grown up together, and they’ve bonded for many years over a combined love of coffee.
“We were tired of spending so much money on coffee, because we both just drink coffee non-stop,” Parker said. “We both started researching, because we really wanted to work for ourselves” and “spend time with our kids,” Ellington added.
“And both of just were just joking one day and said ‘what if we opened up our own coffee shop?’ and you (Ellington) interjected and asked ‘why not open a coffee camper since that’s a little less expensive?'” Parker said.
Things built up from there.
“Next thing you know we’re driving to Nashville to pick up and RV,” Parker said. The pair began in a small RV they renovated together to turn into a mobile barista’s heaven.
Plans were to stay in the RV for a while as the business grew out of area parking spots where they setup shop, but when the opportunity came to get a physical home and open for regular hours during the week, they jumped in full steam ahead.
“We basically outgrew the camper faster than we expected,” Ellington said. “This came open and it all worked out.”
Where the name comes from? Simple, Ellington said.
“It’s like a cup of sanity,” Ellington said. “It keeps us sane. I’ve got three kids, and she’s got two. So its our cup of sanity.”
Sanity Coffee Company officially opened their doors back in May, and have been serving up customers ever since. They offer fresh brews in hot and cold varieties and much more at 1215 Rockmart Hwy., Cedartown.
They are open from Monday through Friday, 6 a.m. to 4 p.m., but are looking to expand hours as the business grows. That’s been their philosophy all along with building up Sanity Coffee Company – to keep things moving at a steady pace they can both afford and ensure that things don’t get crazy.
They’ve slowly been expanding their employee base and have enough to cover for weekends, they look to potentially open for Saturdays and possibly Sundays.
Drive-thru service is available at Sanity Coffee Company (see above photo for the layout for pulling in.) Online ordering is also available to get a cup of coffee brewing before getting to the window to pull up.
“We’re looking to get arrows painted so people can navigate the lanes,” Parker said. “Customers are welcome to use the window, since we know in the mornings it might be difficult to get out and come inside with the kids out of school.”
